BIRCHER MUESLI
SERVES 2 LARGE PORTIONS OR 4 SMALL

INGREDIENTS
1 cup rolled oats
½ cup natural yoghurt
½ cup apple juice
¼ cup water
¼ cup slivered almonds
2 tbs goji berries (optional)
1 large green apple or 2 small green
apples, grated
METHOD
Mix oats, yoghurt, juice, water, almonds and goji berries in a bowl. Cover
and refrigerate overnight.
Before serving, add the grated apple to the oat mixture and gently stir
through until well combined.
Divide oat mixture into bowls. Top with apple matchsticks, a dollop of
yoghurt, cinnamon, extra goji berries, some frozen raspberries and a
drizzle of maple syrup if desired.
TO SERVE
Green apple matchsticks, extra yoghurt, cinnamon, extra goji berries,
frozen raspberries, maple syrup.
